GENERAL PRINCIPLES

Matching wine and food is a sensitive subject because it is a subjective matter, influenced by personal taste and fashion.

There are, however, certain basic, general rules regarding the order to adopt when matching food and wine, to enhance your wines as much as possible.

  • A white wine is drunk before a red wine
  • A dry wine is drunk before a sweet wine
  • A light wine is drunk before a heavy wine
  • A simple wine precedes a complex wine
  • A young wine takes precedence over an old wine

WHICH WINE TO SERVE

Here are some rules to help you when choosing wine. Wines should be chosen based on the menu, and not vice versa:

  • A simple wine with simple food
  • One wine with a simple meal
  • Light wines with light dishes
  • Fresh, acidic wines with fatty dishes
  • Powerful wines with rich dishes
  • A regional wine with a regional dish
  • Great wines with great cuisine
